Super easy peanut butter chocolate chip & soft double chocolate cookies.

It’s been a little quiet on my blog the past two weeks, so I thought it was time to break the silence with these super easy and delicious cookies! Two recipes in one post, and on top of that it will only take about 40 minutes of your time to have these cookies on the table!

I found these two recipes in a Belgian vegan Facebook group I’m in. I honestly have no idea where they originally come from, but they’re so easy to make that I think they’ll probably have travelled half of the vegan society by now. So let’s get in the kitchen and find out for yourself how easy to make and super tasty they are! I’m sure they’ll steal your heart, just like they did with mine 😉


For the peanut butter chocolate chip cookies:

  • What do you need? (about 9 cookies)
    – 1/3 cup peanut butter
    – 1 cup sugar
    – 1/3 cup non-dairy milk (I used almond milk)
    – 1 cup flour
    – 1 cup rolled oats
    – 1/2 cup chocolate chips
    – 2 tablespoons vegetable oil (I used sunflower)
    – 1 teaspoon vanilla extract
    – 1/2 teaspoon baking soda (or baking powder)
    – 1/2 teaspoon salt

 

  • How do you make it?
    Mix all the dry ingredients, except for the chocolate chips, in a bowl. Add the peanut butter, milk, vanilla extract and mix until you get a smooth dough. Add the chocolate chips and stir through again. Preheat the oven at 220 degrees (Celsius). Put a scoop of dough on a baking tray (don’t forget to put greaseproof paper on it if it’s not nonstick) and spread it out a little so you get a round shape. Repeat this and make sure there’s enough space between the scoops. Bake the cookies in the oven for 8 to 10 minutes. Let them cool down and store them in a box to prevent them from drying out. (Or just eat them all at once, I won’t blame you 😉 ) Enjoy these sweet and salty guys!

 

For the soft double chocolate cookies:

  • What do you need? (about 9 cookies)
    – 1/2 cup vegan butter (I used Alpro soy butter)
    – 1 cup sugar
    – 1/4 cup non-dairy milk
    – 1 and 3/4 cup flour
    – 1/4 cup cacao powder
    – 1/2 cup chocolate chips
    – 1 teaspoon vanilla extract
    – 1 teaspoon baking soda
    – 1 teaspoon baking powder

 

  • How do you make it?
    Mix all the dry ingredients, except for the chocolate chips, in a bowl. Add the butter, milk, vanilla extract and mix and knead until you get a sticky dough. Add the chocolate chips and knead them through. Preheat the oven at 180 degrees (Celsius). Prepare a baking tray and repeat the same scooping process as above. (In my case, this dough was very sticky and the cookies were still very fluffy and soft inside after cooling down. I really like them this way, but as it was the first time I made them, I’m not really sure if they’re supposed to be like that. Please let me know if yours turn out differently, I’m very curious! 🙂 ) Put the cookies in the oven for about 12 minutes and let them cool down before storing them or binge eating them like a real chocoholic 😉 Enjoy these fluffy chocolate sweethearts!
